Fathers and kids, are you looking for something to make for mom on Mother’s day?! Here is an easy peasy no cook no bake recipe, that the kids will have a lot of fun making it and the mom will definitely love it! Skip the rum in half the batch and the kids can enjoy it themselves!

This is an easy and yet quite tasty recipe that you can make without messing it up. Especially if you have invited folks over for dinner and you realize all you have is some plain vanilla ice cream and you want to serve them something more. I am telling you, the guests will love the little rum surprise in it. I made these rum balls last Sunday after breakfast and lil V came running asking to taste. Of course, I could not give him this. So, I decided to make a rum-less batch for him. I had only half of the amount of peanut butter that I needed for the recipe, so I decided to substitute with some sun butter for the rest.

It was perfect for him. He absolutely loved it and kept asking for more and I had to limit him to 2 or 3 as his after lunch dessert and let him indulge in one more during his snack time.

I quickly had to pack up the rest and keep them in the refrigerator, or else he kept pointing at my stand mixer and asking for more. Only when I showed him that the mixer was in fact empty did he stop asking and he was not too happy about that either!

Almond Peanut Butter Rum Balls – The Recipe

Ingredients:

Almond Meal - ⅓ cup
Graham Crackers, crushed - ⅓ cup (about 2 crackers yield ⅓ cup)
Peanut Butter - 5 tbsp.
Confectioner's sugar - ½ cup
Butter, softened - 2 tbsp.
Spiced Rum - ⅓ cup
Vanilla Extract - 1 tsp
Almond extract - ¼ tsp
Ground Cinnamon - ½ tsp
Ground cardamom - a pinch
Desiccated coconut (optional) - for rolling the balls in

For the Kids version:
Almond Meal - ⅓ cup
Graham Crackers, crushed - ⅓ cup (about 2 crackers yield ⅓ cup)
Peanut Butter - 2 tbsp.
Sun Butter - 3 tbsp
Confectioner's sugar - ½ cup
Butter, softened - 4 tbsp.
Chia seeds - 2 tbsp.
Ground Flax seeds - 1 tbsp
Vanilla Extract - 1 tsp
Almond extract - ¼ tsp
Ground Cinnamon - ½ tsp
Ground cardamom - a pinch
Desiccated coconut (optional) - for rolling the balls in

Method:

Mix all these together in a stand mixer with a paddle attachment. Add a little more of butter or almond flour to make it thicker or to get more grease to help bind.
Roll them into key lime sized balls. Roll over in desiccated coconut or cocoa powder if needed.
Store in an airtight container in the refrigerator for up to a week to 10 days.

Notes: Substitute peanut butter with sun butter or almond butter for allergies!
