Refreshing and filling Blueberry Almond Butter Smoothie that can be a quick breakfast or an after school or post work out snack.
Delicious, juicy blueberries are in season and this year especially, we have been getting our hands on exceptionally sweet and juicy ones. We have been buying them by the pound and eating them as it is, or mixing them up in smoothies like this one or doing some quick baking too.
Now, with the baby girl keeping me busy, the baking part has been less. It has been more of snacking by the bowlful or making quick smoothies.
As all you mamas know, breastfeeding brings out a new level of hunger in you and it is very important to keep healthy snacks along with your water and other nursing essentials. Otherwise, it is very easy to go down the rabbit hole of never ending unhealthy snacks. ( read chocolate truffles, ice cream and corn chips!! – I have been addicted to those). So, I make it a point to take some fruits with me upstairs when I go up for the night.
A favorite fruit combo this season has been a bowl full of blueberries and Rainier cherries. Sweet enough to satisfy that sweet tooth craving and you totally wont feel guilty if you finish the entire bowl in one sitting. And all that fiber, girlfriend, you will thank yourself for that later!
Coming back to the smoothie, this has been a great protein boost for some much needed afternoon pick me up energy. Also, breastfeeding is a work out in itself, so that’s that.
Aside from the protein from the Almond Butter and Almond Milk, the blueberries are a super food in itself and you get two servings of fruit with this one recipe.
If I ever make the mistake of making this smoothie when V is around, I better make two servings, or I am not getting any. Happened twice already! I bet you and your family will love this too.

Blueberry Almond Butter Smoothie
Ingredients
- ½ cup blueberries
- 1 banana
- 2 tablespoon almond butter smooth is what I used, crunchy would be fine too
- 1 tablespoon flax meal
- 1 cup almond milk unsweetened vanilla
- ½ cup ice cubes

Instructions
- Blend all ingredients together in a blender, I use my Ninja blender for all my smoothies. Pour out to a glass and enjoy right away.
