Bursting with cherry goodness and some herb-y thyme to balance out the sweetness, these Cherry Thyme Puff Pastry Hand Pies are a must have in your summer dessert baking list.
Its yet another month and we have yet another round up of recipe from the FoodieMamas. This month we have chosen a very seasonal fruit, Cherries and I am so excited to share them with you all. Cherries always remind me that summer is almost here. Cherries always set the precedent for the arrival of the summer stone fruits – peaches, nectarines and plums – my favorite of all kinds of fruits and of course all the berries too. It is always a very exciting time to see such a wonderful array of fruits in the market and so many many ideas of what all to cook with them to eat and drink. Ah, I love summer and summer produce!
I bring to you some Cherry Thyme Puff Pastry hand Pies that are easy to make as well as bursting with all the cherry goodness. Have them as it is or top with some of your favorite ice-cream to enjoy them in a different way.

Cherry Thyme Puff Pastry Hand Pies – The Recipe
Ingredients:
- 1 sheet puff pastry sheet, thawed
- ¼ cup flour, for dusting
- 2 cups cherries, pitted
- 2 tablespoon granulated sugar
- juice of ½ lemon
- 4-5 sprigs of thyme
- 1 egg
- 2 tablespoon coarse sugar to sprinkle on top
Method:
Add the cherries to a sauce pan and cook them over medium heat, crushing them a little with the back of the spoon till they soften. Add the sugar and lemon juice and let it continue cooking till it thickens up a little. This will take about 15 mins or so as the sugar will release more water.
Remove from heat and let it cool. Chop the thyme roughly and add it to the cherry mixture.
Preheat the oven to 400F.
Roll out the puff pastry on a surface dusted with flour. Cut the puff pastry into desired shapes. Spoon a little of the cherry mixture onto the cut shapes. Moisten the edges of the shapes with a little water so they stick together. Press the edges firmly and decorate the edges with a fork.
Beat the egg with a little water and brush that over the filled puff pastry pies. Bake in the oven for 15-20 mins till the pastries are golden and crisp. Remove from oven, let cool and serve.
