How to make Apple Cinnamon French Toast casserole
- Core and chop apples. You can peel them if you want but it is not necessary. Toss them in ground cinnamon, brown sugar and just a little lemon juice, just to keep them from browning.
- Butter a casserole dish and tear up the brioche bread into roughly equal sized pieces and fit them into the baking dish.
- Scatter the apples around the bread slices and tuck some of them in, so every bite has a little bit of the apple goodness in it.
- Beat the eggs together and add the milk, vanilla extract, maple syrup, ground cinnamon and ground allspice and mix well.
- Pour this custard over the brioche and apple mix in the casserole and press down some of the bread so it is all covered with the custard.
- Cover and refrigerate till ready to bake.
- Preheat the oven to 350F.
- Bake for 25 mins uncovered and serve hot with some warm maple syrup to pour over.

Cinnamon Apple French Toast Bake
Ingredients
- 1 loaf brioche
- 2 apples cored and chopped, about 2 cups
- 1 teaspoon cinnamon
- ¼ cup light brown sugar
- 1 tablespoon lemon juice freshly squeezed
- 5 eggs
- ¾ cup whole milk
- ¼ cup maple syrup
- ½ teaspoon allspice
- 1 teaspoon vanilla
- 1 tablespoon unsalted butter

Instructions
- Grease a baking pan with butter.
- Tear up the brioche and place it tightly all around the pan.
- Toss the apples with ½ teaspoon ground cinnamon, brown sugar and the lemon juice.
- Add this to the baking pan and tuck some of the apples in between the brioche.
- In a mixing bowl, make the custard by whisking the eggs. Add the milk, maple syrup, ½ teaspoon ground cinnamon, allspice and vanilla. Mix to combine.
- Pour this custard over the brioche and apples. Press down the brioche to make sure it is coated well with the custard.
- Cover and refrigerate till ready to bake.
- Preheat oven to 350F.
- Place the casserole in the oven and bake uncovered for 25 mins or so, till the custard is set with the brioche to make the baked French toast.
- Serve warm with more maple syrup or top with some powdered sugar.
