These Honey Cardamom Cookies are truly anytime-cookies that can be made in under 30 minutes and they are eggless too!
Anytime Cookies. Yes, that is a term I coined.
These honey cardamom cookies are light enough and not overly sweet, that you can have them with your morning or evening chai.
They are still sweet enough that you can have them for dessert if you want. Warm it up and top it with some vanilla ice cream.
And you can really make them quickly in under 30 mins with no stand mixer or hand mixer. You just need a mixing bowl, spatula, a saucepan, a cookie sheet and an oven. That’s all that you need to make this!
Also, you can dunk them in milk, top them with ice cream, crumble them for a sweet topping or just take a bite. Do whatever it is that you want with Eggless Honey Cardamom “Anytime” Cookies.
As I am thinking of how easy it is to make them, the little song from the Disney Junior show Special Agent Oso. It is one of V’s favorite and we make him do a lot of things he doesn’t want to do, by making it fun with “special steps” just like Oso does, when he is on a special assignment.
I feel like a Special Agent when I am in the kitchen making these cookies.
“Six special steps, is all that you need. Six special steps and you’ll succeed. Your special assignment is starting now and six special steps will show you how”
Step 1. Melt the butter, honey and sugar in the saucepan.
Step 2. Sift the dry ingredients in the mixing bowl.
Step 3. Pour the contents of the saucepan into this.
Step 4. Mix well.
Step 5. Place a tablespoon of the mixture onto a baking sheet with parchment paper on it and flatten it with the bottom of a glass.
Step 6. Bake and eat!
That’s it! Its that simple.
Eggless Honey Cardamom “Anytime” Cookies – The Recipe
Ingredients:
- 7 oz, unsalted butter
- ⅔ cup granulated sugar
- 3 tablespoon honey
- 2 cups all purpose flour
- 1 teaspoon baking powder
- ¾ cup almond meal
- a pinch of salt
- 2 teaspoon ground cardamom
Method:
Preheat the oven to 325F. Line a baking sheet with parchment paper and keep aside.
In a saucepan melt together the butter, honey and sugar on medium heat.
While the butter and sugar are melting, sift together the flour, baking powder, almond meal and cardamom to a mixing bowl.
Make a well in the center of the mix and pour the contents of the saucepan. Mix well with a spatula.
Drop about a tablespoon of the cookie dough onto the parchment paper. Flatten it with the bottom of a glass.
Bake for about 20-25 mins or until lightly golden. Transfer to a wire rack to cool. Store in airtight container.
Note: These cookies don't expand on baking, so you don't need to leave a lot of space in between them.

I have been using cardamom a lot lately but never tried it in a cookie. What a treat!

i use cardamom in many Indian recipes, but, I have never tried to put it into a cookie recipe. Definitely trying this.
