Summer times are for grilling. Especially being here in Seattle, the rainy city. Any little bit of sunshine and warm weather will get people heading out for hiking, biking or other fun outdoor activities. Some of the more lazier one like us, who like to stay put but also want to take advantage of the warm weather, take on grilling and al fresco dinners on the patio.

In the last couple of years, I have been trying to come up with fun recipes for us to cook outside on the grill. I have been getting pretty bored of just grilled chicken, grilled paneer (like this paneer tikka) or burgers ( these Tandoori Chicken Burgers are amazing, by the way).

I came across these lamb chops at our local co-op grocery store and picked it up. As I was driving back home wondering what to cook with the lamb chops, I decided to take a safer route. A marinade that I must have made a hundred times to cook chicken. It is an Indian style masala and yogurt marinade.

How to make the Indian Masala and Greek Yogurt Marinade for the Lamb Chops?

The ingredients in it are very similar to what I use to make my green chutney. If you have tasted and loved the cilantro mint chutney you get with samosas and other Indian take outs, then this recipe is for you.

Blend together Greek yogurt, cilantro, mint, garlic, jalapeno, turmeric, cumin, coriander, garam masala and salt. The yogurt will help blend the other ingredients together, so there is no need to add any water.

If you make extra and save some of it, you can use it later to marinate some chicken or shrimp or even paneer or tofu. And grill or bake them for an easy dinner.

How to marinate the Lamb Chops?

  • Pat the lamb chops dry with a paper towel.
  • Make tiny slits on the lamb chops with the end of a paring knife.
  • Rub the masala marinade thoroughly over the lamb chops and let it chill in the refrigerator for 3-4 hours.
  • Remove from the refrigerator and leave out at room temperature for 30 mins before starting to cook it.

How long to cook the lamb chops? How do you know if they are done?

  • Once the lamb chops have been sitting out for 30 mins. Apply a little oil on either side of the chops.
  • Fire up the grill and let it get to a high temperature, around 400F, knob at medium to high on the gas grill.
  • Grease the grill grates with some oil and place the lamb chops on them.
  • Grill each side for 2-4 mins depending on how well done you want them to be. The internal temperature should reache 145F for rare or 160F for well-done.

What to serve with these grilled masala lamb chops?

These masala grilled lamb chops go well with naan, which you can also heat up on the grill. A side of dal and some fresh salad like this Avocado Cucumber Salad with Chaat Masala can be also served with it to make it a complete meal.
