Hello from the land down under!! Our days are now filled with experiencing the beautiful city Sydney, devouring the culinary treats this city has to offer and enjoying the great vibe the city has to offer. Its been a couple of days here now and I am loving it so far!

All the awe inspiring food that we have been eating here made me remember the wholesome flavors this simple mashed potato recipe has to offer and I wanted to quickly get it out there for you to enjoy till I get back home in a few days. I am carefully documenting every single morsel I am eating here and will share it all with you on here soon. Indian Style Mashed Potatoes with Curry Leaves and Coconut Oil - Vegetarian, Vegan, Indian - Cooking Curries (2)

Indian Style Mashed Potatoes with Curry Leaves and Coconut Oil – The Recipe

Ingredients:

  • 2, russet potatoes
  • salt, to taste
  • 2 tablespoon coconut oil
  • 5-6 pearl onions, peeled and chopped
  • 1 teaspoon black mustard seeds
  • 8-10 curry leaves
  • 2 Thai green chillies or Serrano chillies, sliced at an angle
  • ½ teaspoon asafetida (skip this if you want it to be gluten free as most powdered asafetida available in the market has a little all purpose flour added to it)

Method:

Wash the potatoes well, cut in half and cook in salted boiling water till soft. Drain the water, wash the potatoes again and peel them. The skin should just come off when you peel with your hands. Mash well and add more salt, if needed.

In a small pan, heat the coconut oil and add the mustard seeds, once they pop, add the pearl onions. Wait for the pearl onions to crisp up a little and then add the curry leaves, chillies and asafetida.

Pour over the mashed potatoes and serve warm.

Cook time: 20 mins
Total time: 25 mins
Serves: 2-3
