This quick and easy Strawberry Salsa that is all things summer in a bowl, is a perfect special something to make for someone special. Its sweet, its tangy, its vibrant and oh so delicious!
As summer rolls by, we are slowly getting a break for a couple of weeks before a whole lot of madness starts all over again. I am talking about the much awaited birth of our daughter – our first girl and our second baby. The husband and I have been so busy setting up the dream nursery and making sure everything is ready for our baby girl to be here.
The brains of the project is me, however all the muscle and weeks of hard work on top of a busy full time job, is my husband, 100% of it. No complaining, no questions asked, no debating if its too much. He just did it all. This guy, ladies and gentlemen, is dad to one of the luckiest boys I know and soon to be dad to a wonderful girl too.
I have seen him grow as a dad and be there for our son – be it spontaneous wrestling, taking him for soccer and swim lessons, reading books to him, helping him make Mother’s day gifts for me, being patient in building miniature Lego models, kissing him goodnight, teaching him how to be a kind human who respects others and much much more.
I just cant wait to see him do all that and more with our daughter too.
For a dad who is as awesome as he is, the least I can do, when I cant cook up something elaborate that he loves, is to make a quick, refreshing snack for him while he takes a break. He totally deserves it!

Strawberry Salsa
Ingredients
- 1 cup diced strawberries
- 1 jalapeno diced
- ¼ red onion diced
- ¼ cup minced cilantro
- ½ lime juiced
- 1 teaspoon honey

Instructions
- Toss all the ingredients together and serve with some chips or on some grilled bread as a crostini.
