The idea for this slow cooker chicken curry came into my head when a very dear friend asked if I had a recipe for a chicken curry in a crock pot. I said no. That is when I started thinking that I always used my slow cooker for things like beans and lentils, that take time to cook or for soups, because that is what first comes to your mind when you think of slow cooker. At least, my mind. I have once made a dessert and that’s it. I haven’t really tried to use the slow cooker for something that I would otherwise make on the stove top, just so that it makes my life easier and that I don’t have to stand in the kitchen the entire time and cook it.
I am so glad you asked me about this recipe, Mona and I am even more glad I attempted at one!
It is very similar to the Easy Chicken Curry recipe, with all the ingredients pretty much the same, except for the coconut milk except that here I just have to put them all in the slow cooker and set it to cook and I can step out, go exercise, take a nap, whatever I want to do and the curry will cook all by itself! I just check the crock pot after a couple of hours and add the coconut milk to it and give it a stir. That is pretty much the only step I have to do. It is that easy, you guys!

Slow Cooker Chicken Curry with Coconut Milk – The Recipe
Ingredients:
- 1 ½ lbs chicken thighs
- 2 tablespoon olive oil
- 3 cloves garlic, minced
- 1 teaspoon grated ginger
- ½ teaspoon turmeric powder
- 1 red onion, chopped
- 3 roma tomatoes, chopped
- 1 teaspoon cayenne pepper
- 1 ½ teaspoon garam masala
- ½ teaspoon cumin powder
- ½ teaspoon coriander powder
- salt, to taste
- 1 can, 13.5 oz, coconut milk
- ¼ cup chopped cilantro
Method:
Add all the ingredients except the coconut milk and cilantro to the slow cooker. Give it a quick mix and set the slow cooker to high. Cook for 2- ½ hours.
Add the coconut milk, mix well and let it cook for another hour.
Garnish with cilantro and set it to warm setting till it is time to serve. Serve with rice or chapatis.

I made this a little quicker - 3 1/2 hrs or so on high. Maybe you can set it at low and set for 7-8 hours?

This is a very good recipie. I will use it again. I used skinless, boneless organic chicken and doubled the recipe. I'm in Canada and the size of the coconut milk was not mentioned. We have a smaller and larger size available. I used a 400 ml size (about 12 oz). which is plenty for doubling the recipie. I added some carrots and a little extra onion. Both worked out fine. I could see trying different veggies to add to the dish ie green beans, cauliflower or broccoli. (During the last 1/2 .hour)
