
Ground pork and scallions are stir fried in a garlicky sauce tossed with noodles and topped with Sichuan chili oil for some added heat. This spicy pork noodles is a simple and extremely delicious noodle dish that can be put together very quickly for an easy weeknight dinner.

Noodle dishes are a favorite everywhere. The husband and I always loved noodles and the kids have taken on that love as well. A quick noodle stir fried with some meat or veggies is something that happens quite often for dinner in this household.
This is the first time I am venturing out of Indo-Chinese cooking to a little more of just the Chinese cuisine territory. This recipe is inspired by Cook’s Country’s take on the Sichuan Dan Dan noodles.
I tinkered around on the internet and loved this recipe for spicy crispy pork noodles by Woks of Life. I kinda combined the elements that I loved about both these recipes and made my own version of it.
The result was just pure genius. Genius, not because it was delicious, which it was. Genius, because something so delicious and flavorful was so easy! I have since made it many times and I have even skipped the pork and used tofu instead with this delicious sauce to make a vegetarian version for me.

What are the ingredients in this spicy pork noodles recipe?
The ingredients are fairly simple in this recipe, if you normally cook Asian food at home. You may need one or two special ingredients which can easily be bought on Amazon or at your neighborhood Asian grocery store.
You will need ground pork, Chinese lo mein noodles, any high heat oil, garlic, ginger, scallions and Sichuan chili oil.
The ingredients you need for making that killer sauce are soy sauce, hoisin sauce, Chinese aged black vinegar, rice vinegar, chili garlic sauce and sugar.
To make the spicy pork noodles with scallions
Make the sauce mix by mixing together all the ingredients for the sauce with some hot water. Slice the scallions, ginger and garlic.
Cook the noodles and keep aside.
Heat the oil in a wok or heavy bottomed pan like a cast iron pan or a Dutch oven. Add the ginger, garlic and scallions to it and stir fry.
Add the sauces, stir fry and add the ground pork. Break down the pork to smaller pieces and let it cook till no longer pink.
Toss the noodles with this. Top with Sichuan chili oil and some more scallions before you serve.

- This recipe can be made with any ground meat like ground chicken or ground beef.

Spicy Pork Noodles with Scallions
Ingredients
- 1 lb Chinese lo mein noodles 16 oz
- ¼ cup avocado oil or peanut oil
- 8 oz ground pork
- 6 cloves garlic sliced
- 2 teaspoon sliced ginger
- 1 cup sliced scallion whites and greens of one bunch of scallions
- 2 teaspoon Sichuan chili oil
To be mixed in to a sauce
- 3 tablespoon soy sauce
- 3 teaspoon hoisin sauce
- 1 tablespoon aged black vinegar
- 2 tablespoon rice vinegar
- 2 teaspoon chili garlic sauce
- 1 teaspoon sugar
- 4 tablespoon hot water

Instructions
- Cook the noodles according to package instructions. Drain, rinse with cold water and keep aside.
- Mix all the ingredients together for the sauce mix and keep aside.
- Heat oil in a wok or any other heavy bottomed pan over high heat.
- Add the scallions, garlic and ginger to it.
- Stir fry for 2-3 minutes till they start to crisp up but not brown.
- Add the sauce mix and let it cook through till fragrant. This will take about 2 minutes.
- Add the ground pork to this and break the pork apart with the spatula. Mix it into the sauce well.
- Stir fry till pork is no longer pink, about 2-3 minutes.
- Add the noodles to this and toss well.
- Top with more sliced scallions and Sichuan chili oil before serving.
