Simple and fresh Tomato Basil Cannellini Bruschetta made with the simplest of ingredients, highlights the Tuscan way of cooking!

Tomato Basil Cannellini Bruschetta - The Tuscan Way

The first thing that comes to my mind when I think of Tuscan cooking is the simplicity of it. I first experienced it during our visit to Italy way back in 2011 and we took a day trip to Tuscany from Florence. We stopped by a winery for lunch and even though the vegetarian option for lunch was a simple omelet and cheese as the appetizer course and a very delicious and flavorful spaghetti with pomodoro sauce for the main course. It was simple, yet, it was one of the best meals I have had and I can still remember the taste of it. I kept wondering how such a simple meal can be made so delicious, with such a complexity of flavors. It is the simple fresh ingredients in it that made that possible.

The Tuscan Countryside

Such depth of flavors with the Tuscan touch can be found in Bertolli sauces. Their humble beginnings are from Lucca, Tuscany. The Bertolli way of cooking is the Tuscan way where there is a lot of emphasis on preparing good ingredients in all their simplicity to make great Italian food. Tuscan cuisine uses simple fresh ingredients, just like in this Tomato Basil Cannellini Bean Bruschetta. All you need is a glass of Chianti to wash it all down with and you can take yourselves to Tuscany.

The cannellini beans is slightly sautéed with some garlic and Bertolli Tomato Basil sauce. Rustic bread is then toasted with olive oil brushed on it. Top the toasted bread with the Tomato Basil Cannellini. Drizzle some olive oil and balsamic vinegar and a final touch of fresh basil is all you need to make this simple and rustic yet flavorful and elegant dish.

Tomato Basil Cannellini Bruschetta – The Recipe

Ingredients:

  • Any rustic bread, cut into slices
  • ¼ cup + 1 tablespoon Good quality Extra Virgin Olive Oil
  • 1 can Cannellini Beans, rinsed and drained
  • 1 clove garlic, minced
  • salt, to taste
  • ½ cup Bertolli Tomato Basil Sauce
  • 1 tablespoon Balsamic Vinegar
  • julienned fresh basil, for garnish

Method:

Brush some olive oil on either side of the bread slices and toast them well. Heat a tablespoon of olive oil in a pan and add the garlic to it. Add in the cannellini beans and salt and mix well. Let it cook for just a couple of minutes. Add Bertolli Tomato Basil sauce to it and mix well. Remove from heat and keep aside.

While serving, top each toasted bread slice with 2-3 spoonsful of the cannellini bean mix, drizzle some olive oil and balsamic vinegar over it and garnish with fresh basil.

Ingredients
  • Any rustic bread, cut into slices

Instructions
