Oatmeal Breakfast Poha

The traditional poha with flattened rice, transformed into a power packed bowl with oatmeal and lots of veggies, to help you start your day right!

Ingredients

  • 2 tablespoon grape seed oil
  • ½ teaspoon mustard seeds
  • 8-10 curry leaves
  • ½ cup thick poha / flattened rice
  • ½ cup old fashioned oatmeal
  • ½ red onion , chopped
  • 2 Thai green chillies , chopped
  • ½ teaspoon turmeric powder
  • 1 carrot , chopped
  • 1 small yukon gold / yellow potato , chopped
  • ½ green bell pepper , chopped
  • salt , to taste
  • ¼ cup minced cilantro
  • ½ lime

Instructions

  • Heat the oil in a deep pan and add the mustard seeds to it. Once they crackle, add the curry leaves and the onion, chillies, turmeric powder, carrots, potato and green bell pepper. Lower the heat and cover and cook till the potatoes are almost cooked.
  • Add the oatmeal and poha, sprinkle a little water and cover and cook for a couple of minutes. Add salt and mix well.
  • Once the poha is also cooked, remove from heat, squeeze the lime and garnish with cilantro. Serve hot with a cup of hot chai.
