Ingredients

  • 1 cup Arrowhead Mills Organic Buttermilk Pancake and Waffle Mix
  • 1 ripe banana
  • ¾ cup whole milk
  • 2 tablespoon butter , melted
  • 1 teaspoon vanilla extract
  • ½ cup strawberries finely chopped
  • 3 tablespoon butter , for cooking the pancakes
  • extra strawberries and banana slices , for garnish (optional)

Instructions

  • Mash the banana with a fork in a large mixing bowl. Add the pancake mix, milk, butter, vanilla and mix well with a whisk till there are no lumps. Add the strawberries and mix it in.
  • Heat a skillet over medium – low heat. Add a little of the butter to the skillet and pour a ladleful ( about ⅓ cup) of pancake batter to it. Once small bubbles start to form and pop, flip the pancake over and let it cook on the other side for a couple of minutes.
  • Repeat with the rest of the batter and serve with the optional sliced bananas and chopped strawberries on top of it.
