extra strawberries and banana slices, for garnish (optional)
Mash the banana with a fork in a large mixing bowl. Add the pancake mix, milk, butter, vanilla and mix well with a whisk till there are no lumps. Add the strawberries and mix it in.
Heat a skillet over medium – low heat. Add a little of the butter to the skillet and pour a ladleful ( about 1/3 cup) of pancake batter to it. Once small bubbles start to form and pop, flip the pancake over and let it cook on the other side for a couple of minutes.
Repeat with the rest of the batter and serve with the optional sliced bananas and chopped strawberries on top of it.
