  • Preheat oven to 350F.
  • In a medium mixing bowl, cracks the eggs and whisk them well. 
  • Add the pumpkin puree, milk and vanilla and mix well. 
  • In a large mixing bowl, mix together the brown sugar, spices (cinnamon, nutmeg, ginger, cloves and cardamom), baking powder and salt. 
  • Add the wet ingredients to this and mix well. Mix in the oatmeal too. 
  • Grease an 8 by 8 baking tray with the butter. Pour the oatmeal mix into this and spread out evenly.
  • Bake uncovered for 40-45 mins or so. 
  • Serve with optional toppings of warm milk, whipped cream, maple syrup or fruit.
