Place the ¼ cup sugar and ¼ cup water in a sauce pan over medium heat and let the sugar melt completely. Remove from heat.
Meanwhile, rinse and dry the cranberries thoroughly.
Working in batches, dunk the cranberries in the simple sugar syrup and place them on a wire cooling rack placed on top of a baking sheet (this is to catch the drips).
Let them dry for an hour or so.
Pour the organic unbleached sugar in a shallow wide dish.
Again, working in batches, add the almost dried and sticky sugar syrup coated cranberries to the sugar and roll them around in it, till it is coated well.
Place them back on the cooling rack for an hour more to dry completely.
Store in airtight jars for a couple of days and store in the refrigerator for up to 10 days.
