Summer Fruit Salad with Honey Lime Mint Dressing

- 2 lbs mix fruits (strawberries, blueberries, blackberries, pineapple) about 5 cups
- 2 teaspoon honey
- 2 teaspoon olive oil
- 1 lime juiced
- 8-9 mint leaves
Wash the mint leaves and pat them dry. Stack them up together one on top of the other and roll them tightly. Slice them to make mint juliennes.
Whisk together the olive oil, lime juice and honey,
Now, mix the mint juliennes to this mixture to make the salad dressing.
In a large serving bowl, dump the fruit mix of summer berries and pineapple. (you can use combo of any fruits you like).
Drizzle the fruit salad dressing over the cut fruits and toss well.
