Summer Fruit Salad with Honey Lime Mint Dressing

Ingredients

  • 2 lbs mix fruits (strawberries, blueberries, blackberries, pineapple) about 5 cups
  • 2 teaspoon honey
  • 2 teaspoon olive oil
  • 1 lime juiced
  • 8-9 mint leaves

Instructions

  • Wash the mint leaves and pat them dry. Stack them up together one on top of the other and roll them tightly. Slice them to make mint juliennes.
  • Whisk together the olive oil, lime juice and honey,
  • Now, mix the mint juliennes to this mixture to make the salad dressing.
  • In a large serving bowl, dump the fruit mix of summer berries and pineapple. (you can use combo of any fruits you like).
  • Drizzle the fruit salad dressing over the cut fruits and toss well.
  • Serve your easy, fresh, homemade summer fruit salad right away!
