Masala Sausage and Egg Breakfast Casserole

This masala sausage and egg casserole is a deliciously spiced, prep-ahead breakfast recipe.

Ingredients

  • 4 links chicken sausage or any other favorite kind
  • ½ yellow onion chopped
  • 1 green bell pepper chopped
  • 1 red bell pepper chopped
  • ¼ cup minced cilantro
  • 1 cup grated cheddar cheese
  • 1 teaspoon cayenne
  • 1 teaspoon garam masala
  • salt to taste
  • black pepper to taste
  • 10 eggs
  • 2 ½ cups half and half
  • 3 tablespoon olive oil

Instructions

  • Preheat oven to 300F 
  • Heat 2 tablespoon oil in a saute pan. Add the onion and peppers to it and saute till the onion is translucent.
  • Remove from pan and keep aside.
  • Cut up the sausage into bite sized pieces and saute in the same pan for 3-4 minutes.
  • Grease a 9x13" casserole dish with the remaining 1 tablespoon olive oil. Add the cooked vegetables and sausage to this.
  • Add the cheese and cilantro to it too. Mix well.
  • Beat the eggs in a mixing bowl. Add the salt, black pepper, cayenne, garam masala and the half and half to it. Mix well.
  • Pour this over the vegetables and sausage in the casserole dish.
  • Bake in the oven for 40-50 mins till the center of the casserole reads 160F.
  • Remove from oven, let it cool for 10 mins and then cut and serve.
