Spicy Pork Noodles with Scallions

Ground pork and scallions are stir fried in a garlicky sauce tossed with noodles and topped with Sichuan chili oil in this Spicy Pork Noodles recipe.

Ingredients

Instructions

  • Cook the noodles according to package instructions. Drain, rinse with cold water and keep aside.
  • Mix all the ingredients together for the sauce mix and keep aside.
  • Heat oil in a wok or any other heavy bottomed pan over high heat.
  • Add the scallions, garlic and ginger to it.
  • Stir fry for 2-3 minutes till they start to crisp up but not brown.
  • Add the sauce mix and let it cook through till fragrant. This will take about 2 minutes.
  • Add the ground pork to this and break the pork apart with the spatula. Mix it into the sauce well.
  • Stir fry till pork is no longer pink, about 2-3 minutes.
  • Add the noodles to this and toss well.
  • Top with more sliced scallions and Sichuan chili oil before serving.

Notes

  • This recipe can be made with any ground meat like ground chicken or ground beef.
  • To make this spicy noodles recipe vegetarian, substitute the pork with cubed tofu.
  • If the recipe is a tad too spicy for you, use less of the sichuan chili oil. I would recommend not skipping it, as it is an integral part of this recipe.
