Cook the noodles according to package instructions. Drain, rinse with cold water and keep aside.
Mix all the ingredients together for the sauce mix and keep aside.
Heat oil in a wok or any other heavy bottomed pan over high heat.
Add the scallions, garlic and ginger to it.
Stir fry for 2-3 minutes till they start to crisp up but not brown.
Add the sauce mix and let it cook through till fragrant. This will take about 2 minutes.
Add the ground pork to this and break the pork apart with the spatula. Mix it into the sauce well.
Stir fry till pork is no longer pink, about 2-3 minutes.
Add the noodles to this and toss well.
Top with more sliced scallions and Sichuan chili oil before serving.
Notes
This recipe can be made with any ground meat like ground chicken or ground beef.
To make this spicy noodles recipe vegetarian, substitute the pork with cubed tofu.
If the recipe is a tad too spicy for you, use less of the sichuan chili oil. I would recommend not skipping it, as it is an integral part of this recipe.
