½tspblack mustard seeds( if you totally don’t have it or cant find it anywhere, you can skip this too)
5-6curry leaves, optional
½red onion, chopped
1green bell pepper, deseeded and chopped
1roma tomato, chopped
2Thai green chillies, slit in half ( you can use serranos or jalapenos too)
salt, to taste
a little water to sprinkle on top
minced cilantro, to garnish
Cut the bread into about 1 inch cubes and keep aside.
Heat the oil in a pan and add the mustard seeds to it. Once they splutter, add the curry leaves and asafetida. Add the red onions, bell peppers, green chillies and turmeric powder. Saute for a few minutes till the onions and peppers are soft. Add the tomatoes and the bread pieces. Add salt and mix well.
Sprinkle about a ¼ cup of water on top, lower the heat to medium low and cover and cook for a couple of minutes, till the bread and the tomatoes soften. Give it another quick mix.
Top with fresh minced cilantro and serve hot.
When you are serving to kids, make sure to remove the green chillies.
