Chocolate Bundt Cake

Ingredients

  • 1 ½ cups whole wheat pastry flour
  • 1 ½ teaspoon baking powder
  • ¾ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ stick butter melted
  • ½ cup canola oil
  • 1 cup granulated sugar
  • ½ cup cocoa powder
  • 3 eggs
  • ¼ cup cream
  • 1 cup semi sweet chocolate chips
  • ½ teaspoon vanilla extract
  • 1 shot espresso (or 2 teaspoon instant espresso powder)

Instructions

  • Preheat teh oven to 350F. Grease the bundt pan and keep aside.
  • Sift the pastry flour, baking powder, baking soda, salt and cocoa powder in a medium bowl and keep aside.
  • Cream the butter, oil and sugar together in a stand mixer or by hand and add the eggs to it one by one. Add the vanilla and espresso and mix well.
  • Fold in the sifted dry ingredients till well combined. 
  • Mix in the cream and the chocolate chips as well.
  • Pour into the bundt pan and bake for 40-45 mins until a skwere when inserted, comes out clean.
  • Let cool in the pan and turn it out. Dust some powdered sugar on top, optionally. Enjoy it warm.
