Mix the butter, sugar, egg and the vanilla and almond extracts thoroughly.
Sift the dry ingredients together - flour, soda and cream of tartar.
Cover with plastic wrap and chill for 2-3 hours.
Heat oven to 325F. Divide the dough into ¼ portions.
Lightly flour the work surface and the rolling pin and roll out each quarter of dough to desired thickness.
Cut out shapes. Place on baking sheet and bake for 7-10 mins till the bottom side of the cookie is golden.
Cool on wire rack before storing in an airtight container.
To decorate (optional) : Sprinkle some colored sugar on the cookies before placing them on the tray to bake. Or decorate with icing once cooled.
