Fried Eggs Over Roasted Asparagus and Green Garlic Herb Butter Sauce | A Spring Brunch Recipe

Ingredients

  • For the Asparagus
  • Asparagus - 1 bunch trimmed
  • Olive Oil - 1 tbsp.
  • Salt and fresh ground black pepper - as needed
  • For the green garlic herb butter
  • Green Garlic chopped - ½ cup
  • Butter - 2 tbsp.
  • Dried herbs mix any mix would do - parsley, oregano, basil, cilantro. Pick your favorite few - ½ tsp
  • Salt - a pinch
  • For the eggs
  • Eggs - 2
  • Butter - 1 tbsp.
  • Salt and fresh ground black pepper - as needed

Instructions

  • Preheat the oven to 350F. Arrange the asparagus in a baking sheet. Pour the olive oil over it and sprinkle the salt and pepper. Mix to coat well and bake for 10-15 mins or so, till the asparagus are tender. Keep checking on them as the cooking time will vary with the freshness of the asparagus.
  • In a saute pan, melt the butter over medium heat. Add the herbs, salt and the garlic greens. Saute till the garlic greens become soft. Remove from heat and keep aside.
  • In a saute pan, melt half of the butter over medium heat. Break the egg on to the pan. Sprinkle salt and pepper. Let it cook till the sides crisp up a little.
  • Repeat with the other egg as well.
  • To serve:
  • Place the asparagus spears on the plate. Pour a little of the green garlic butter sauce over it. Top with the fried egg and serve hot.
