Preheat oven to 350F.
In a medium mixing bowl, cracks the eggs and whisk them well.
Add the pumpkin puree, milk and vanilla and mix well.
In a large mixing bowl, mix together the brown sugar, spices (cinnamon, nutmeg, ginger, cloves and cardamom), baking powder and salt.
Add the wet ingredients to this and mix well. Mix in the oatmeal too.
Grease an 8 by 8 baking tray with the butter. Pour the oatmeal mix into this and spread out evenly.
Bake uncovered for 40-45 mins or so.
Serve with optional toppings of warm milk, whipped cream, maple syrup or fruit.
