Masala Sausage and Egg Breakfast Casserole
This masala sausage and egg casserole is a deliciously spiced, prep-ahead breakfast recipe.

- 4 links chicken sausage or any other favorite kind
- ½ yellow onion chopped
- 1 green bell pepper chopped
- 1 red bell pepper chopped
- ¼ cup minced cilantro
- 1 cup grated cheddar cheese
- 1 teaspoon cayenne
- 1 teaspoon garam masala
- salt to taste
- black pepper to taste
- 10 eggs
- 2 ½ cups half and half
- 3 tablespoon olive oil
Preheat oven to 300F
Heat 2 tablespoon oil in a saute pan. Add the onion and peppers to it and saute till the onion is translucent.
Remove from pan and keep aside.
Cut up the sausage into bite sized pieces and saute in the same pan for 3-4 minutes.
Grease a 9x13" casserole dish with the remaining 1 tablespoon olive oil. Add the cooked vegetables and sausage to this.
Add the cheese and cilantro to it too. Mix well.
Beat the eggs in a mixing bowl. Add the salt, black pepper, cayenne, garam masala and the half and half to it. Mix well.
Pour this over the vegetables and sausage in the casserole dish.
Bake in the oven for 40-50 mins till the center of the casserole reads 160F.
Remove from oven, let it cool for 10 mins and then cut and serve.
