A cozy spirit forward fall cocktail with fresh figs muddled in gin and homemade ginger syrup and topped with seltzer. This will soon become your favorite cocktail to sip by the fire on those crisp chilly fall evenings.
0.5 ozfresh lime juiceabout 3 tsp, juice from one small lime
3-4fresh figs
4ozseltzerto top with
2cupscrushed ice
4-5ice cubes
more figs and thyme for garnish
Instructions
Muddle the figs in a cocktail shaker with a muddler.
Add the ice cubes to the cocktail shaker along with other ingredients except the seltzer and thyme.
Shake well for 5-8 seconds.
Pour over a tea strainer (basically a double strainer - the strainer in the cocktail shaker and the tea strainer) into cocktail glasses filled with crushed ice.
Top with seltzer and give it a quick swizzle to mix well.
Garnish with skewered fig and thyme sprig.
Notes
* To make ginger syrup
1 part organic sugar / ½ cup
1 part peeled and diced ginger root / ½ cup
1 part filtered water / ½ cup
Combine the ingredients in a blender and pour through a fine mesh strainer into a storage jar. Refrigerate for upto 3 weeks.Recipe obtained from Seaplane Kitchen and Bar, Seattle.
