Ingredients

  • 6 slices of any bread , I used whole grain bread
  • 1 tablespoon grapeseed oil
  • ½ teaspoon black mustard seeds ( if you totally don’t have it or cant find it anywhere, you can skip this too)
  • 5-6 curry leaves , optional
  • ½ teaspoon asafetida , optional
  • ½ red onion , chopped
  • 1 green bell pepper , deseeded and chopped
  • 1 roma tomato , chopped
  • ½ teaspoon turmeric powder
  • 2 Thai green chillies , slit in half ( you can use serranos or jalapenos too)
  • salt , to taste
  • a little water to sprinkle on top
  • minced cilantro , to garnish

Instructions

  • Cut the bread into about 1 inch cubes and keep aside.
  • Heat the oil in a pan and add the mustard seeds to it. Once they splutter, add the curry leaves and asafetida. Add the red onions, bell peppers, green chillies and turmeric powder. Saute for a few minutes till the onions and peppers are soft. Add the tomatoes and the bread pieces. Add salt and mix well.
  • Sprinkle about a ¼ cup of water on top, lower the heat to medium low and cover and cook for a couple of minutes, till the bread and the tomatoes soften. Give it another quick mix.
  • Top with fresh minced cilantro and serve hot.

Notes

When you are serving to kids, make sure to remove the green chillies.
