Bread Upma – Savory Bread Sauté

A quick and easy to make breakfast or snack with fresh or leftover bread, this Bread Upma is a favorite among the little ones too.

Bread Upma

You don’t necessarily need stale bread to make this recipe. I usually make it when I take out bread to make bread and eggs for breakfast and then I don’t feel like eating it and sometimes it becomes a quick French toast or this bread upma.

Most of the ingredients are what you will regularly have at hand, so you can just go ahead and make this any morning without having to plan ahead. Also, this tastes so good when all you want is a nice hot and fresh savory breakfast and every sip of that hot cup of chai (or coffee) goes so well with this.

It also keeps you feeling filled and you can throw in any veggies you like to take care of that extra boost for starting the day right.

When I made this, I didn’t have many vegetables on hand, so I used some onions and green peppers. You can add carrots, green peas, corn, red / yellow peppers, zucchini and what not! You can even top it with a fried egg for that extra protein boost.

Method

Cut the bread into about 1 inch cubes and keep aside.

Heat the oil in a pan and add the mustard seeds to it. Once they splutter, add the curry leaves and asafetida. Add the red onions, bell peppers, green chillies and turmeric powder. Saute for a few minutes till the onions and peppers are soft. Add the tomatoes and the bread pieces. Add salt and mix well.

Sprinkle about a ¼ cup of water on top, lower the heat to medium low and cover and cook for a couple of minutes, till the bread and the tomatoes soften. Give it another quick mix.

Top with fresh minced cilantro and serve hot.

Note: When you are serving to kids, make sure to remove the green chillies.

Ingredients

  • 6 slices of any bread , I used whole grain bread
  • 1 tbsp grapeseed oil
  • ½ tsp black mustard seeds ( if you totally don’t have it or cant find it anywhere, you can skip this too)
  • 5-6 curry leaves , optional
  • ½ tsp asafetida , optional
  • ½ red onion , chopped
  • 1 green bell pepper , deseeded and chopped
  • 1 roma tomato , chopped
  • ½ tsp turmeric powder
  • 2 Thai green chillies , slit in half ( you can use serranos or jalapenos too)
  • salt , to taste
  • a little water to sprinkle on top
  • minced cilantro , to garnish

    This looks like such an amazing recipe for breakfast! I’ve never heard of bread upma before but I need to try it. Love all the spices! I think I have them all but the asafetida.

      Asafetida lends a nice pungent fragrance to it but you can skip it too, if you want.
