Strawberry Rhubarb Sparkling Cocktail

  • 6 oz Strawberry lemonade homemade or you can use this
  • 4 oz Rhubarb Syrup I used the Ikea one
  • 2 oz Bombay Sapphire Gin
  • 1 small bottle 200 ml good quality chilled Prosecco, I used La Marca


  • Take crushed ice in a shaker and add the strawberry lemonade, rhubarb syrup and gin and shake well. Strain out into two champagne flutes. Top with chilled Prosecco and serve immediately.
