Recently I have turned into more of an avid wine drinker than a cocktail drinker. Mostly because it is easier to open a bottle and pour yourselves a glass of wine and also because whenever we go out, I have a hard time picking a good cocktail and most often it turns out be not that good tasting or is watered down. There just was no inspiration out there to have some good cocktails.

I still however buy various liquors, liqueurs, bitters and other add ons to try and make some cocktails at home, but then again it goes back to my first reason. With the little time I have in the evening to get dinner ready and on the table and then to clean everything up before I get to my computer for a few hours of work to wrap up my day, pouring myself a glass of wine is just a lot easier. And don’t get me wrong, I do love my wine, especially reds.

I bought this Rhubarb syrup this summer from Ikea and have been meaning to make something with it and never really got around to it. Last weekend we had a party at home and there was a lot of strawberry lemonade left over from that. I mean, it was a nice cold day, no wonder no one wanted to drink icy cold lemonade. What was I thinking?!! Anyway, because I had leftover strawberry lemonade, I decided to take out the rhubarb syrup and make a cocktail out of it. The sparkling wine is just because I am a sucker for sparkling anything and it combines my love of wine and cocktails. It also makes a pretty drink for any New Year entertaining you plan to do!

Strawberry Rhubarb Sparkling Cocktail – The Recipe

Ingredients:

  • 6 oz Strawberry lemonade, homemade or you can use this
  • 4 oz Rhubarb Syrup, I used the Ikea one
  • 2 oz Bombay Sapphire Gin
  • 1 small bottle ( 200 ml) good quality chilled Prosecco, I used La Marca

Method:

Take crushed ice in a shaker and add the strawberry lemonade, rhubarb syrup and gin and shake well. Strain out into two champagne flutes. Top with chilled Prosecco and serve immediately.
