Chicken Piccata - Chicken Recipes, Easy Weeknight Dinner, Family Dinner Recipes - Cooking Curries

Simplicity is good. Sometimes there is a beauty in simplicity that is not there otherwise. Some of the greatest tasting food in the world are those that are simple – just a few ingredients, but good ingredients and cooked with your heart and soul. I cannot stress anymore the importance of good fresh ingredients in your everyday cooking. They are so full of flavor and goodness that you pretty much wont need a whole lot more to serve a really filling yet healthy dinner to your family – that is what I call REAL FOOD. Just simple, good, fresh ingredients. If it is organic, especially for the dirty dozen of produce, then even better. Not canned food, not frozen food, and definitely not something that comes pre packaged with a lot more ingredients than what you may have in the pantry.

This Chicken Piccata is something like that simple dish we are talking about. I bought some organic chicken breasts. Mixed it with some capers, olive oil, parsley (I buy organic for almost all leafy greens and herbs or harvest from my little herb pot on the deck), garlic, lemon, thyme and some white wine and cooked it all together. Not a whole lot of ingredients. Just a handful. And voila, without a whole lot of effort, I was able to serve a nice hot homemade dinner to my family.

Chicken Piccata – The Recipe

Ingredients

  • 1 ½ lb organic chicken breast, cut into 3 inch pieces
  • 3 tablespoon olive oil
  • 4 teaspoon capers
  • ¼ cup parsley, minced
  • 2 cloves garlic, minced
  • salt and black pepper, to taste
  • ⅔ to 1 cup white cooking wine
  • ½ lemon, juice squeezed
  • ¼ teaspoon red chili flakes
  • ¼ teaspoon dried thyme

Method

  • Preheat the oven to 350F.
  • Heat the olive oil in a pan on the stove. Add the chicken, salt and pepper and garlic. Cook the chicken on each side for 3-4 minutes, over medium high heat till it browns a little.
  • Transfer the chicken to a baking dish and add the rest of the ingredients to it, reserving some parsley for garnish.
  • Cook at 350F for 30 mins or so until the chicken is done. You can test it by cutting out a small piece of chicken to see if the insides are cooked or with a meat thermometer that should read 165F when inserted into a chicken piece.
  • Garnish with the reserved parsley and serve hot.
