A spring inspired picnic with some amazing, yet very affordable wine, cheese, crackers, a quick and easy Lemon Garlic Tortellini Pasta Salad and some other tidbits, all from Grocery Outlet.

As spring ushers in the warm weather, (along with the rains, yes!), we are getting ready for some easy light spring recipes to enjoy in a spring inspired picnic. What best to pair these with, than some delicious wines.

I get so very excited with picnics and summer picnics are a regular feature in our household. I didn’t want to keep the fun of picnics restricted just to summer and wanted to be ready for a warm spring day to tote our picnic bag and blanket to head out, even if it is to our backyard.

That is when I heard about the bi-annual wine sale at Grocery Outlet. A wine sale always gets me, especially this one like a 20% off on all wines! How cool is that right? And of course, I had to make a quick trip there to see what they had in store.

There were some fabulous roses and whites, along with some wonderful reds too. But I was more focused on the roses and whites for my spring inspired picnic. There were many local wines as well as imported ones.

I picked up the wines I wanted and walked around the store to see what else was there. I was pleasantly surprised to find everything else that I needed for the picnic other than just the wines. They had a good cheese selection – I picked up a creamy havarti and a double cream imported cheese to go with the rose wines.  There was an organic kale pesto that I couldn’t let pass as well as some crackers and a nut mix.

I also picked up some tortellini, tomatoes, lemon and arugula for the Lemon Garlic Tortellini Salad I was making for the spring picnic.

I even picked up some chocolate macaroons for dessert! There, all my shopping all done and over in one go. Not only that, I got such a great deal on the wines and also the food!

Once I had everything ready on had, all it took me was 15 mins to put together the pasta salad and then to lay out everything else I brought along for the picnic.

Ingredients

  • 9 oz five cheese tortellini
  • 3 tbsp olive oil extra virgin
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ lemon juice and zest
  • 1 cup cherry tomatoes halved
  • 1 cup baby arugula
  • salt to taste
  • crushed black pepper to taste
  • ¼ cup grated parmesan
US Customary - Metric

Instructions

  • Cook the tortellini in salted boiling water for 6-7 mins or as per package instructions.
  • Meanwhile, wash the arugula and cherry tomatoes. Half the cherry tomatoes and keep aside.
  • Drain the pasta and add it to a serving bowl. Toss with olive oil, lemon juice and zest, garlic powder, paprika, arugula, cherry tomatoes, salt and pepper.
  • Top with grated parmesan and serve.
