A simple salad of cucumber and avocado made quickly by tossing a few ingredients together and adding some chat masala to give it an Indian touch.

Simple and fresh salads are what summer is all about. Especially with fresh and light ingredients like cucumber, avocado, cherry tomatoes and a squeeze of fresh lime! You can easily eat a bowlful and not feel guilty at all or worry about getting into that swim suit for your upcoming beach vacation.

This is great for lunch, for most people, that is. I can never eat just a salad for lunch with no carb and protein. But I do love this as a mid-morning snack.

This is a take on the regular cucumber avocado salad that you see, as I have added some chat masala and cayenne to it, but it is also a take on the Indian staple salad – Kachumber – that is a mix of cucumber, tomatoes, onions, lime, salt, cayenne, chat masala and cilantro. The added avocado and the olive oil is a twist to that. So, it is a twist on both cucumber avocado salad and the Indian Kachumber Salad.

What can I serve this Cucumber Avocado salad with?

You can serve it as it is, as a salad. You can add some chickpea and/or some feta to it to make it more as a meal.

You can serve it as a side salad to go with roti / rice and a curry.

This can also be served as a dip and use some chips to scoop it up, like a modified guacamole 🙂

Cucumber Avocado Salad with Chat Masala

Ingredients

  • 2 avocados almost ripe
  • ½ red onion finely chopped
  • 1 English cucumber trimmed and chopped
  • 1 cup cherry tomatoes halved
  • ¼ cup minced cilantro
  • 2 tbsp olive oil
  • ½ lime juiced
  • ½ tsp cayenne
  • ½ tsp chat masala
  • salt to taste
  • crushed black pepper to taste

Instructions

  • Peel, pit and chop the avocado. Add the cucumber, onion, cherry tomatoes and cilantro along with the avocado in a medium mixing bowl.
  • Add in the olive oil, lime juice, salt, pepper, cayenne and chat masala and toss well.
  • Serve right away.
