Spicy Tomato Grileld Cheese Sandwich

Who doesn’t love a good grilled cheese sandwich?! I don’t know of anyone and our family especially loves it and we can eat it for breakfast, lunch, dinner or even a snack. I like to dress up regular old plain grilled cheese sandwiches with various other add on fillings – this Spicy Tomato Grilled Cheese Sandwich, Chili Cheese Grilled Cheese Sandwich, Masala Omelet Grilled Cheese Sandwich, Avocado Grilled Cheese Sandwich, Potato Curry Gilled Cheese Sandwich, to name a few.

And especially come summer, we are all about grilled cheese sandwiches. Whether to fire up the grill and grill the sandwich on it or to to make it on the stovetop  and pack some to take out for a picnic lunch or dinner, it is one of our go-to summer foods.

Spicy Tomato Grilled Cheese Sandwich (1 of 4)

The important part in a grilled cheese sandwich, the one that makes or breaks it, is of course, the cheese! In this Spicy Tomato Grilled Cheese Sandwich, I love to use Black Creek®’s Sharp Cheddar Cheese that is aged 2 years. It is smooth and creamy and the sharp aged cheese is able to stand up to the spicy tomato filling while lending its own characteristics to the sandwich.

  • 4 slices bread
  • 2 tbsp mayo
  • 2 tbsp butter
  • ½ red onion chopped
  • 2 Thai green chillies chopped
  • 2 Roma tomatoes chopped
  • 2 tbsp tomato ketchup
  • salt to taste
  • 2 thick slabs of Black Creek® Cheddar
  • 2 thick slabs of Smoked Mozzarella
