We never really celebrate Valentine’s day because I never believed in just one day for love (and also not to give in to the Hallmark holiday) but sometimes it is just impossible to not get sucked in to all that is happening around you. Especially with V around and a whole Valentine’s day week theme at his school and all that. And it just suddenly seems cute when you are doing all this for a 2 year old. Well, lets just say the husband also benefits from this vibe around the house.
I made this chocolate chip pancakes with almonds for breakfast one day. I made little heart shaped chapatis for dinner the next day and so on. I am even thinking of making some red velvet cupcakes over the weekend! This is so not me at all. But it will be a lie if I say that I am not enjoying this.
I leave you with an easy recipe for chocolate chip almond pancakes that you can make for your little and big Valentine – as breakfast, lunch, dinner or all meals
Ingredients
- 1 ½ cup Bob's Red Mill Whole Grain Pancake Mix
- 2 eggs
- 2 cups organic milk
- 2 tablespoon melted organic butter
- ¼ cup chocolate chips - your favorite kind
- ¼ cup sliced almonds
- 1 teaspoon vanilla extract
- more butter, to make pancakes
Instructions
- Crack the eggs into the flour mixture. Add the milk and butter as well. Mix in well.
- Add vanilla extract, chocolate chips and almond and mix it in. If the batter is not the right consistency, add some more milk to it.
- Heat a skillet on the stove top. Add ¼ tablespoon butter to it.
- Ladle out about ¼ cup pancake batter onto the skillet. let it spread out by itself.
- Over low to medium heat, let the pancake cook, till you see tiny bubbles appearing on top.
- Flip over and let it cook for a couple of minutes more.
- Repeat with the remaining batter.
- Serve with fresh fruits and milk!
