Strawberry Pancakes that are naturally sweetened with banana will not need any extra syrup and your littles will love this for their breakfast!

We love pancakes! And French toast. And smoothies. For breakfast.

As much as V does not care for dessert that much, he loves something sweet for breakfast. He prefers sweet to savory for breakfast at any given time. When we run out of bread to make toast and eggs or French toast, our fall back is always pancakes. I always like to mash a banana into the pancake batter, so the natural sweetness from it makes it taste so good even without any additional syrup on top. Any other fruits or chocolate chips or other fun things that we add to it, adds to the flavor.

I also always have a good pancake mix ready in the pantry, as it is just easier to use one mix than look for flour and baking powder and all that in the morning rush. I love Bob’s Red Mill’s Organic 7 Grain Pancake and Waffle Mix and Arrowhead Mills Organic Sprouted Grain Pancake and Waffle Mix and Arrowhead Mills Organic Buttermilk Pancake and Waffle Mix.

These pretty pancakes with those red strawberries are a perfect treat to your little Valentine on Valentine’s day!

Strawberry Banana Pancakes – The Recipe

Ingredients:

  • 1 cup Arrowhead Mills Organic Buttermilk Pancake and Waffle Mix
  • 1 ripe banana
  • ¾ cup whole milk
  • 2 tablespoon butter, melted
  • 1 teaspoon vanilla extract
  • ½ cup strawberries finely chopped
  • 3 tablespoon butter, for cooking the pancakes
  • extra strawberries and banana slices, for garnish (optional)

Method:

Mash the banana with a fork in a large mixing bowl. Add the pancake mix, milk, butter, vanilla and mix well with a whisk till there are no lumps. Add the strawberries and mix it in.

Heat a skillet over medium – low heat. Add a little of the butter to the skillet and pour a ladleful ( about ⅓ cup) of pancake batter to it. Once small bubbles start to form and pop, flip the pancake over and let it cook on the other side for a couple of minutes.

Repeat with the rest of the batter and serve with the optional sliced bananas and chopped strawberries on top of it.

Note: To make it Vegan friendly, substitute the butter with your favorite oil and substitute the whole milk with almond or oat milk.

    Mmm these look lovely! If there was ever a time and a place for a ready made pancake mix it's when it comes to cooking breakfast with kids! Great recipe!

    Hey Manju, Pancakes are my one of favourite breakfast recipe they are Healthy, sweet and so full filling whenever I get bored with regular breakfast I make pancakes. thanks for sharing a recipe .
