A classic egg preparation from the Indian subcontinent. This Indian Masala Omelet utilizes, onions, tomatoes, green chillies and garam masala to provide the base flavor – you can add more vegetables to it, if you feel like it, like the mini peppers that I added and maybe some cheese too to this basic recipe that I present to you!

I love using a non-stick pan for making this, but since I try not to use non-stick with the typical non-stick coating to it, I have moved on to hard anodized pans instead which provide the same non-stick qualities without the nasty PFOA stuff. I was particularly thrilled when I was sent these pans from the new Anolon Nouvelle Copper line of products to try them out! They heat up so evenly because of a newly designed base that distributes the heat better and the best thing about them is that it is safe to use metal utensils with them! Yay! And they look super sleek too!

Indian Masala Omelet – The Recipe

Ingredients:

  • 1 tbsp oil / butter
  • 2 eggs
  • ¼ red onion, chopped finely
  • 1 Thai green chillie, chopped
  • ½ Roma tomato, chopped
  • 1 yellow mini pepper, deseeded and chopped
  • 1 tbsp minced cilantro
  • salt and freshly crushed black pepper, to taste
  • ½ tsp garam masala

Method:

Crack the eggs into a bowl and mix all the ingredients together, except the oil. Heat the oil in a skillet and add the egg mixture to it. Cook over medium-low heat. You can flip it over and cook the other side, but that’s totally a personal preference. I prefer it cooked just on one side.

Serve hot with toast!

    Garam masala in eggs?! I feel like I’ve been missing out over here. I love garam masala, it’s so full of earthy flavors. I’m definitely planning to try this recipe!
