Fluffy and quick to make Raspberry White Chocolate Pancakes are not just for breakfast, they are practically desserts and can make for special breakfast treats!
As you all may know by now, us FoodieMamas pick an ingredient each month and we all try to come up with fun and delicious recipes for you all with that ingredient. This month’s ingredient is Raspberry. Know that word association game, where someone says a word and you have to say the first word that comes to your mind when you hear it?
C’mon. It sounds like fun. Lets play this.
Blueberry. Lemon.
Chocolate. Ice Cream.
Nutella. Banana.
Paneer. Tikka Masala.
Onions. Tomatoes.
Egg. Omelet.
Avocado. Toast.
Chia. Paappi. (V says that for his PB, Banana, Chia Smoothie)
Peanut Butter. Jam
Mango. Coconut. (I don’t know why?!?)
Raspberry. White Chocolate.
There you go. That’s what comes to my mind when I think of Raspberries. White Chocolate.
When I heard that this month’s ingredient was raspberry, I knew I had to make something with white chocolate in it. I have made these very delicious Raspberry Vanilla Cupcakes with White Chocolate frosting years ago, when I made cupcakes every month to celebrate V’s first year. Every month on the 12th, I would make a different cupcake and we would celebrate out lil cupcake’s month birthdays. The Raspberry and White Chocolate cupcakes that I made then, was so very delicious and I thought I will make them again. For some weird reason, they just wouldn’t work with me. It was a total disaster and these Raspberry White Chocolate Pancakes came out of desperation.
I knew I wanted to make something with Raspberries and White Chocolate and I did not have very much time before our deadline to try something else. So, I made this for breakfast one day. The day after we had banana chocolate chips for breakfast and V got very upset that we are having pancakes every day for breakfast. Don’t ask me.
Well, that was that. Anyway, we loved these pancakes even if we had pancakes two days in a row. And I hope you love it as much as we did!

Raspberry White Chocolate Pancakes – The Recipe
Ingredients:
- 1 cup whole grain pancake flour, I use Bob’s Red Mill brand
- 2 bananas, mashed
- 2 eggs, beaten
- 1 cup organic raspberries, rinsed
- ¼ cup to ½ cup milk
- salt, a pinch
- ½ cup white chocolate chips
- about 2-3 tablespoon butter, for greasing the skillet
- more raspberries and white chocolate shavings for garnish
Method:
Mix the flour, bananas and eggs together with a fork. Add the ¼ cup milk and mix it in to see the consistency. If it needs to be a little thinner in consistency add some more milk. Add the raspberries and mash them in to the batter. Add the salt and mix it in as well.
Grease a skillet with some butter and heat it over medium low heat. Pour about ⅓ – ½ cup of the batter on it. Sprinkle about a tablespoon of the white chocolate chips on the pancake batter in the skillet. Wait for little bubbles to show up on top of the pancakes and for them to start bursting. Flip the pancakes over and cook for a couple of minutes.
Repeat with the rest of the batter to make about 10-12 pancakes. Top with raspberries and white chocolate shavings when serving.
