Mango Lassi Popsicles

It is almost the tail-end of summer, but we are still having some really warm days and I want to make the most of sitting outside on our deck, having dinner outside with a glass of wine and having lots of popsicles. I started making these for lil V, but he is not too fond of the icy cold feeling. If I melt it a little and hand it to him in a bowl with a spoon, he is a happy kiddo. He loves ice-creams but popsicles, not so much. Hopefully that changes soon and I am forced to make more popsicles next summer Smile If your kiddo loves popsicles, then this might be worth a try!

Mango Lassi Popsicles – The Recipe

Ingredients:

Fresh Mangoes – 2, skinned and chopped
Kefir or Regular Buttermilk – 3-4 cups
Heavy cream – ¼ cup, optional
Sugar – 4 tbsp to ¼ cup, depending on the sweetness of mangoes and how sweet you want the popsicle to be
½ tsp ground cardamom

Method:

Beat all the ingredients together in a blender until smooth.
Pour into popsicle molds and freeze anywhere from 6-8 hours, until set.
If you don’t have popsicle molds, you can pour into a regular container and freeze and serve as frozen mango lassi.
Use additional toppings like roasted and crushed pistachios, crushed peanut brittle etc.
