Are you tired of the same old marshmallow studded sweet potato casserole? No offense to that dish. But sometimes, things need a little shaking up and that includes sweet potatoes too.
The first time I saw this combo of maple syrup and chipotle with sweet potatoes was in an Ina Garten recipe for mashed sweet potatoes. I am not so much for smoky flavors but this combo was intriguing enough for me to try it.
A lot of recipes out there for sweet potatoes, mashed or roasted with maple syrup and chipotle peppers call for chipotle peppers in adobo sauce. Now, that is a different level of smokiness I can’t handle, so I opted for plain dried chipotle peppers.
I already have dried chipotle peppers in my pantry and if I can use up any of the million things in my pantry first before buying something new, I will. So, that is how this dish came into being and we have been loving it all season long!

How to make Roasted Sweet Potatoes with Maple and Chipotle
- Rinse and peel the sweet potatoes. Cube them into 1 inch cubes.
- Mix together maple syrup, olive oil, chipotle chili flakes, salt and black pepper.
- Toss the cubed sweet potatoes with it.
- Spread out on a baking sheet and bake in a preheated oven till done.
- Garnish with a little thyme and serve hot.
Can these roasted sweet potatoes be made ahead?
Yes, you can totally make them ahead and store them in an airtight container in the refrigerator. To reheat, bring them to room temperature and put them in a baking sheet in the oven at 200F for 8-10 mins or so to warm them. Make sure they don't get burnt or cooked too much. They won't be that good.

Maple Chipotle Roasted Sweet Potatoes
Ingredients
- 1 ½ lbs sweet potatoes 2 large ones, cubed into 1 inch cubes, about 4 cups
- 2 tablespoon maple syrup
- 2 tablespoon olive oil use the kind of high heat, not extra virgin
- 1 teaspoon dried chipotle chili flakes
- 1 teaspoon salt
- ½ teaspoon crushed black pepper
- 1 sprig thyme for garnish, optional

Instructions
- Preheat oven to 450F.
- Mix together maple syrup, olive oil, chipotle chili flakes, salt and black pepper.
- Spread the sweet potato cubes on a baking sheet lined with parchment paper and pour the chipotle maple mix onto it. Mix well.
- Bake for 30 mins, rotating the tray half way through.
- Garnish with a little thyme and serve hot.
