Oatmeal Energy Balls with Candy Eyes, all placed spread out on a white plate

Delicious no cook, no bake Monster Energy Balls that can be made in under 10 minutes, are loaded with oatmeal, nut butter, flax and chocolate chips. They are easy, quick, healthy, delicious and a favorite with the kids.

Quick and healthy snacks are what all moms are after. If they are fun snacks, then even better, right?

These Monster Energy Balls are the perfectly easy, quick and healthy after school snack and for Halloween. These can easily be made allergy friendly for a school safe snack as well.

They are called Monster Cookie Energy Bites or Monster Energy Balls. My son is a stickler to terms, when I said cookie balls, it just did not make sense to him as they were spherical and not flat and round, so we just call it Monster Energy Balls here. The candy eyes are to make it feel more monster-like.

Ingredients for making Monster Energy Balls

  • Oatmeal
  • Almond Meal or Nut Flour Blend (Pamela’s has a great one that I add to a lot of things like pancakes, smoothies etc)
  • Coconut Flakes
  • Almond Butter
  • Flax Meal
  • Dark Chocolate Chips
  • Maple Syrup
  • Vanilla Extract
  • Candy Eyes

A large mixing bowl, a spatula and the handful of healthy ingredients is all you need to make this quick snack. These can be stored in airtight container at room temperature or in the refrigerator. If you leave it out, the texture may be a little softer, but it will still hold up.

Why I love these Monster Energy Balls and why you will too.

  • They are healthy for you and your kiddos
  • They are super easy to make, just a few minutes. Your kids can even make it themselves.
  • They are fun, with the monster eyes and what not, which makes it a lot more appealing for the kids
  • There is no one recipe for this. There are a lot of variations to this, while keeping it healthy. So, it’s a different fun treat every time you make it.

Tips for making Monster Energy Balls

  • It only takes a few minutes to put everything in a bowl and mix it well, but you may end up spending a lot of time getting all the ingredients. I suggest, you have all the ingredients measured out and ready to go, before you start making these with your kiddos. That way, no one’s patience is tested and you can put in all the ingredients one by one as they are all lined up, mix well, form balls and enjoy the treats right then and there.
  • If you want more texture, use old fashioned oats and chunky peanut / almond butter. But if you like it smooth, use quick cooking oats and creamy nut butters.
  • To make it nut allergy friendly – use sun butter instead of nut butters and use more oatmeal in place of almond meal or nut flour blend.
  • To make it dairy free / vegan – use vegan chocolate chips (Lily’s brand has great dairy free chocolate chips)
  • To make it gluten free – use gluten free oatmeal
  • Store any leftovers in an airtight container on the counter top or in the refrigerator.

Monster Energy Balls

Ingredients

  • 1 cup oatmeal quick cooking or old fashioned, both work
  • ½ cup almond meal or nut flour blend
  • ½ cup coconut flakes
  • 1 cup almond meal
  • ⅓ cup flax meal
  • ¼ cup dark chocolate chips
  • ½ cup maple syrup
  • ¼ cup candy eyes

Instructions

  • In a microwave safe bowl, melt the almond butter for 30 secs to 1 minute, mixing every few seconds.
  • Add the rest of the ingredients, except the candy eyes to a large mixing bowl. Add the melted almond butter and mix well with a spatula.
  • Take some of this mixture, make a small lime sized ball and press in one or two candy eyes to it.
  • Place them on a plate and refrigerate, loosely covered, for an hour or so, till it no longer very soft. Transfer to an airtight container and store in the refrigerator for it to remain not too soft or store at room temperature.
