Quick and easy recipe for delicious homemade summer fruit salad with a honey lime and mint salad dressing.

Summers are all for salads. I mean, when it is so sunny and beautiful outside, you want something as refreshing as the outdoors, right?

Fruit salads are always a favorite with everyone, even the kids. They are sweet, they are fruits, so whats not to love. Especially when you use all the juicy summer fruits like strawberries, blueberries, blackberries, pineapple and raspberries.

Now, you may think - why make it a salad? What does a fruit salad contain that just a bunch of fruits don't have? Just dump all the fruits in a bowl and call it that right? No, you are wrong, my friend. You need a salad because that delicious fruit salad dressing that you drizzle over these fresh fruits will take them to a whole new level of deliciousness altogether. Don't trust me? Try it and you will know!

So, what is in a fruit salad dressing?

This delicious fruit salad dressing here is made with olive oil, lime juice, honey and julienned mint. Just whisk all these ingredients with a fork and add to the salad. That's all!

The mint is julienned to get all that aromatics out instead of just adding the mint leaves as it is, and also that ribbon-y look makes the salad look pretty and colorful and you get only little pieces of mint in your mouth as opposed to a big leaf which may end up being unappetizing.

To julienne mint leaves, you stack up the leaves one on top of the other, roll them tightly and slice the roll to get beautiful thin ribbons of mint leaves.

Can you make a fruit salad the night before?

You can cut up the fruits the night before and keep, especially the ones that won't turn brown. So, avoid fruits like apple and banana. Other fruits like berries, pineapple, cantaloupe etc should be find cut up the night before. If you want, keep them in separate containers.

On the day of, you can mix all the cut up fruits together, whisk the dressing together, as it will just take 2 mins. And mix them all together.

How do you keep fruit salad fresh or How do you keep the fruits salad from turning brown?

Similar to the answer above, only cut up the fruits that wont go brown and store them individually in air tight containers. Just before serving, mix them together and add your favorite fruit salad dressing, toss well and serve.

If you want to pack it for a lunch box or a picnic, pack the fruits and the dressing separately and mix just before eating.

What goes well with a fruit salad?

You can serve the fruit salad as a side to any meal. We love to serve it with pancakes, waffles or French toast for a breakfast or brunch. You can also serve it alongside a lunch sandwich instead of a vegetable salad. There is no hard and fast rule to this.

Ingredients

  • 2 lbs mix fruits (strawberries, blueberries, blackberries, pineapple) about 5 cups
  • 2 teaspoon honey
  • 2 teaspoon olive oil
  • 1 lime juiced
  • 8-9 mint leaves

Instructions

  • Wash the mint leaves and pat them dry. Stack them up together one on top of the other and roll them tightly. Slice them to make mint juliennes.
  • Whisk together the olive oil, lime juice and honey,
  • Now, mix the mint juliennes to this mixture to make the salad dressing.
  • In a large serving bowl, dump the fruit mix of summer berries and pineapple. (you can use combo of any fruits you like).
  • Drizzle the fruit salad dressing over the cut fruits and toss well.
  • Serve your easy, fresh, homemade summer fruit salad right away!
